you can configure the datasource in the META-INF/jbosscmp-jdbc.xml in your ejb-jar.
You can add a datasource element that contains the JNDI name of your datasource, either in to make it the default datasource for all entities in this jar or inside an tag if you want to configure the datasource on a bean by bean basis:
<jbosscmp-jdbc>
java:/mySQL-DS
...
or
<jbosscmp-jdbc>
<enterprise-beans>
<ejb-name>...</ejb-name>
java:/mySQL-DS
...
