If the only method of deploying/undeploying a WAR or EAR in JBoss is to physically copy the file in the deploy directory and let the scanner do the rest, how should this be handled in a clustered environment with multiple nodes? It would be convenient if one can redeploy from the jmx-console, or am I missing something?

Move is.
Using the jmx-console you should be able to undeploy/deploy
atomically/progamitcally using the add/remove URL on the
farm service.
We still have work todo to allow for "near" seamless
redeployment where the previous undeploy doesn't happen
until the next deployment is in a state where it can
takeover almost immediately. Preferably the words
the "near" and "almost" shoudln't apply.

with methods to add and remove URLs to watch for deployment
across the partition.
By default it watches the farm directory.
