Afaik, that is not supported (officially at least since it has not been tested) So if you find issues, I'd suggest testing with Eclipse 3.3.x as well and see if they still occur.
If they still occur (I'd be surprised if there are that many anoying bugs with 3.3 that it seems unsable, since I use it on a weekly basis) I'd suggest filing jira issues for them or discuss them upfront here -

The problem I get sometimes is that, when I edit the process xml file, the design can become a mess... (eg. arrows to nowhere without being able to drag them to the correct node)
Solution : be patient, try to do your changes in other ways (copy paste, step by step changes, ...)
So have the same hope that this will get fixed in the future. But ok, I don't need to change the definition that much, so I am still patient ;)

Following your advise, I switched to my copy of MyEclipse 6.5 (which is Eclipse3.3 based) and the "empty variable problem" seems to be gone.

Yep, known issue that it happens from time to time and dependent on what you do. Koen is (has been?) working on keeping things in sync. Not sure what the status is. Check the jira (there is an issue afair)
