I'm new to JSF and Richfaces,  I cannot find in the reference the code I should use for the beans, I found only the jsf code.

I'm referring, for example, to the datatable or extended datatable.

Have I missed something??

in simplest cases - the same models used for those components as for standard JSF ones. And in general I could suggest you to checkout sources for demos (http://jboss.org/richfaces/demos.html links here) and try them locally exploring the code.
