I may be biased towards Teiid, in any case
1) How steep is the learning curve for Teiid if someone is not familiar with JBoss?
If you are familiar with SQL and any schema modeling tools, data integration concepts already, Teiid adds upon those features. So, it would be fairly straight forward to start and build upon your skills. Not knowing SQL may be bigger challenge. I would recommend going through a quick-start example to get some understanding.
2) Are there any statistics on the current 'market share' for Teiid as a non-commercial data virtualization solution? Any tips or links are appreciated.
What other non-commercial tools you are comparing against? BTW, Teiid in its prior life used be called MetaMatrix a commercial offering, which was acquired by Redhat, then got renamed and open sourced.
3) Did someone develop (and freely offer) a virtual appliance for a running instance of Teiid? This would be a good idea, since it cuts the work to install the system and allows users to jump directly into the implementation.
None we are aware of or notified about. What kind of usecases you are thinking about? Install/configuration is simple unzipping, needs to be more value prop than that.

The project I am handling is in the Bioinformatics/clinical informatics domain, so the non-commercial tools we have considered/are considering are Biomart software ( http://www.biomart.org/ ) and TranSMART (http://transmartfoundation.org/ - more data warehousing than federation, really, and I am more interested in federation/virtualization at this point). At the commercial level, we might be considering IBM's InfoSphere as well.

Ah! there is the vertical market and your value proposition.
Teiid is not in same market segment as biomart or transmartfoundation, however Teiid can be the foundation tool to build upon to expose similar services, may be as an appliance you are thinking about. However, having access to all that bio medical data and understanding the relationships between those different silos of data, and to providing an unified view that useful across that domain experts is the key.
InfoSphere and Teiid kind of play in same segment, although InfoSphere is more of umbrella suite.
