Don't use java -jar karaf-client.jar way anymore, that's for quite old karaf version and already deprecated.
Now you should use bin/client script(which wrap the java cmd and classpath) instead,
something like
bin/client -u smx -p smx
take a look at to get more details

Interestingly I was using the Fuse ESB configuration documentation that seemed recent at http://fusesource.com/docs/esb/4.4/esb_runtime/index.html
Where is the best source to stay current with documentation, the apache sites for the individual products? Camel, Servicemix, Karaf, etc?

Yes, the fuse doc like http://fusesource.com/docs/esb/4.4/esb_runtime/index.html is a better place to check, we always update docs with each release version to keep them up to date.
I just checked the http://fusesource.com/docs/esb/4.4/esb_runtime/index.html, the "Connecting and Disconnecting Remotely" chapter is correct, it's keep same as the latest karaf wiki.
