If it's a JDBC translator, it supports several import properties to control what is imported: JDBC Translator - Teiid 8.10 (draft) - Project Documentation Editor see schemaPattern, tableNamePattern, and excludeTables

What's the usecase for adding out of curiosity? Is that something the importer is missing?
As for removing there isn't a direct option for that. Workarounds include: introducing views that omit columns, using data roles to prevent unintended access, or using a custom translator to override the import logic.

The other general option is just to specify all of the metadata via DDL rather than going through an import. See DDL Metadata - Teiid 8.10 (draft) - Project Documentation Editor and Metadata Repositories - Teiid 8.10 (draft) - Project Documentation Editor for using DDL inline in the vdb.xml or using a separate DDL file in a zip deployment.
