I have 2 ear files, does anyone know will be deployed first

There is no guarantee for this.

If you need a specific order, don't use the AutoDeployer.
You'll have to write a "script" to get the order you need.

There might be a solution using dependencies in 3.0,
but I haven't investigated it so I can't give you
any instructions.
