How can I customize the column header menu in extendedDataTable? Suppose I want to remove the column visibility control but keep everything else?

How can I configure the table to let the user change the column width regardless of horizontal overflow? Right now, when the table holds more column than visible on the screen, column width can be reduced, but not extended. I would like the user to be able to change the column width regardless of the table width.
