I did not have experience with Symantec.

But in general such scanner might be slow down a system if the scanning is aggressive.

Also JBoss write tmp files, i.e. transaction tracking, jsp pages etc., this might be also slower.

What is dangerous is if the scanner touch files in the deploy folder that will end in a redeploy of the related application.
