Are you using the eclipse that comes with the jbpm installer? or are you using your own eclipse installation? Notice that the jBPM plugins should be installed inside the eclipse that comes with the jbpm installer not all your other eclipse installations.

I would like to create a "Process Project" like mentioned in Picture n°1 (File > New > Other > JBoss jBPM > Process Project).
I haven't this path within eclipse that comes with the jbpm installer !.

Sir, you mean that the right option that allows to model a business process is "jBPM project" ?!.

don't use that as a guideline for jBPM 6 (those are about jBPM 3)
I strongly suggest you to look the web tooling instead ..
