The camel-smtp component does allow the subject to be set per message based on a message header. Have you configured the include regex on the context mapper for the binding to include the "subject" context property? The context mapper for the camel binding controls which context properties are mapped to the camel message sent to the producer endpoint (smtp in this case).
I'll try that if I figure out how it works :-D
Some efforts on the documentation would be great. Once I'll get it, I'll blog on how to do it, at least, for others with the same problem.

Go to your mail binding in the SY editor and select the MessageComposer tag. In the Regular Expressions -> Includes field, add subject.
