Arquillian is neither targeting CDI nor Java EE as such. It's general testing platform and in theory could support anything (latest example is ongoing effort for Vert.x adapter). That said if you want to use Wildfly container adapter and execute your tests in this container you have all 3 possibilities available:
- embedded
- managed
- remote

When it comes to "maven Voo Doo", please have a look at JBoss Forge and Arquillian plugin (currently working 1.4.x branch, but expect 2.x soon). This will basically takes care of all mvn juggling for you.
Also there is javaee-samples project which is heavily using WildFly, as most of the examples there are demonstrating new features of Java EE 7.
