BusinessCalendar can also be used in jBPM 6. Unfortunately, there is no mention of it in the documentation. But this component have been tested with jBPM 6 and as you can see there have been some commits fixing issues lately.

I am having the same issue. Only docs show what is in the file, but there is nothing that shows how to edit these settings in the new UI or file structure
I am still in development, but my goal is to use this feature in an own application, where the jBPM Engine is build in, with its own UI. I will not use the UI of the workbench. I will give you feedback about my results.
Have you thought about using a Timer instead of the Business Calendar? Pros, Cons?

Properties you can set in a properties file: BusinessCalendarImpl (jBPM distribution 5.4.0.Final API)
Default /jbpm.business.calendar.properties in classpath or specify as system property:
Allows to provide alternative classpath location of business calendar configuration file(Chapter 5. Core Engine API)
