You will have to edit the web.xml file present under %JBOSS_HOME%/server/ < serverName>/deploy/jboss-web.deployer/conf folder (For versions prior to 4.2.x, the file will be in %JBOSS_HOME%/server/ < serverName>/deploy/jbossweb-tomcatXX.sar/conf). There's a init-param named "listings" for the default servlets, which needs to be set to false (which i believe is the default)
