I'm guessign there is a bug with the JBoss server becaouse everythign works seamlessly with hte sun server. I've also had to made a switch to the sun server because of Jboss's problems in handling document/literal web services.
Anybody out there with a solution?

did you check JBoss log? "Unable to internalize message" usually means that client recieves response in other format than he expects - in most cases he recieves HTML instead of XML. Are you sure with your proxy settings?
I've also tryed to create simple doc/lit websvc which uses complex type and it's working for me. Check my blog - i've described it there.
