All of a sudden, when I try to start my JBoss 4.3 server, the console seems to stop logging things, all I get in the console is this:

How can I fix this so I see the logs in my console?

After the last message it depends to the log4j configuration whether you see logging at the console output.
So check the server/default/conf/jboss-log4j.xml.
Configuration issues see log4j manual http://logging.apache.org/log4j/1.2/manual.html
if unsure add the log4j config file.
