create a list of select items that you will set in <f:selectItems> tag:
List<SelectItem> selectOptions = new ArrayList<SelectItem>();
selectOptions.add(new SelectItem(someValue1, "some label 1"));
selectOptions.add(new SelectItem(someValue2, "some label 2"));
....
