You can then simply unregister the deployer, as it's simply just another bean/service in the kernel.

Ah, via metadata files, sure.
You can simply add something like that (pseudo code)
<install bean="Deployers" method="removeDeployer">
<parameter><inject bean="NameOfTheDeployer" /></parameter>
</install>

And that bean would then ahve this <install> element.
