The TaskData and TaskSummary classes provide methods for getting the createdOn, activationTime, and expirationTime.

How can I get the date/time when a Task was Claimed and Completed?

We are using 5.4.0-SNAPSHOT.  Will they be methods on TaskSummary and TaskData?

They will be events that you can configure to store and query based on the human task lifecycle. The first initial implementation of this feature will be up in a day or two.
