Second question: Can I somehow configure Server 0 so that it will allow any Server 1, 2... through to N to connect through a core bridge without Server 0 knowing the IP address of that server?
I dont follow, server 0 is the target server and doesnt need to know anything about which core bridges conenct to it, to server 0 they are just cliens sending messages. All the configuration is done from the source servers 1, 2 and N

Do I need any acceptor at all on Server 0 for my scenario?
Is there no security involved at all when using Core bridges? I mean to me the Acceptor is a sort of security thing that only allows certain clients to connect?

there is no connection between acceptors and security, security is done at a finer grained level via security settings on an address.
