You can set this up via the JBoss CLI just like this (assuming you want to have logging per application):
/subsystem=logging/periodic-rotating-file-handler=your-app:add(autoflush=true,suffix=.yyyy-MM-dd,formatter="%d{HH:mm:ss,SSS} %-5p [%c] (%t) %s%E%n", file={path=your-app.log,relative-to=jboss.server.log.dir}, append=true)
/subsystem=logging/logger=com.yourcompany.your-app:add(level=DEBUG,handlers={your-app})
As an alternative you can have a look at standalone.xml / domain.xml in the logging subsystem and modify as needed.

CLI looks like this:
$JBOSS_HOME/bin/jboss-cli.sh --connect "/subsystem=logging/periodic-rotating-file-handler=FILE:write-attribute(name=append,value=true)"
