Ensure you already install camel-jetty feature and your customer bundle have Import-Package org.apache.camel.component.jetty.

I don't want to deploy this projec as a OSGi bundle, but rather use the Spring-framework based deployment...

You can use maven-bundle-plugin to do so.
You can take a look at examples/camel-osgi/pom.xml as an example.
