The KIE Workbench / jBPM Console NG provide a new component called Form Modeller that uses the .form extension which is not available in the eclipse plugins.
I recommend you to try that out inside the web tooling. Designer generates both formats to provide backward compatibility but nowawayds if you have the .form file inside your project it will take precedence over the .ftl file.

Are in git any projects where I can see how to create/use custom elements like tabs, tabels, scrolls, validation and so on for .form file?
Does exist a fork of the console in order to have just the task and instances handling functions?

If you really want to create very advanced forms you can usually code your forms programatically and hook those forms programatically to the tasks and processes.
This is an experimental feature that can be used. If you are interested in that option I can write a quick blog post about it.
If not you are limited to FTL or the current capabilities of the form modeller.
