How to disable hbm2ddl schema update?

I would like to turn off automatic update of the DB schema by hbm2ddl upon deployment. Because it is dangerous on a productive system. I have already lost a table like this. How can I configure that?

in your hibernate config file hibernate.cfg.xml, you have to comment out the setting hibernate.hbm2ddl.auto

There is no such file in my JBoss installation. I am running 4.0.3RC2.
I tried commenting out the properties in $JBOSS_HOME/server/$JBOSS_NAME/deploy/ejb3.deployer/META-INF/persistence.properties
but it does not work.
