There is a panel on the right hand side of the screen where you can access to the properties.
Can you share a screenshot of the screen that you are looking at, where you don't find the properties panel?

In Human Tasks
Name : Editable Field : is user defined information , it should be a value which is having any business context.
Task Name : For this There should be HumanTask Value but i see thats not populating by default.
All The Other Tasks : Example Service Task, WebService , REST tasks
Name : Editable Field : is user defined information , it should be a value which is having any business context.
Task Name : Non-Editable This is the name which is defined in the work Item definition files.
e.g. Webservice task's name in workDefinitions.wid file is "Webservice"
I hope this helps with some rationalization.
