To enable access log you have to add following tag in "domain:undertow" subsystem:

<access-log pattern="%A%t%h%l%u%r%s%b%T%I" directory="${jboss.home.dir}" prefix="access" suffix=".log" worker="default"/>
~~~~
After adding this tag subsystem will look like as:
<subsystem xmlns="urn:jboss:domain:undertow:1.1">
<buffer-cache name="default"/>
<server name="default-server">
<http-listener name="default" socket-binding="http"/>
<host name="default-host" alias="localhost">
<location name="/" handler="welcome-content"/>
<access-log pattern="%A%t%h%l%u%r%s%b%T%I" directory="${jboss.home.dir}" prefix="access" suffix=".log" worker="default"/>

in short you need to upgrade to 8.2 or newer
