If not set (when starting the server), then it defaults to the host name of the server. Do you want to remove that string from the cookie to avoid exposing the host name of the server? If so, you can just start the server by passing it a custom value of your choice for the jboss.node.name system property. An example is as follows:
./standalone.sh -Djboss.node.name=host1
I don't know if there's a way to completely get rid of the node name being suffixed in the cookie value.
