(default should be whatever server config you use: default, all, etc...)
You should find a persistence.properties. In that there is a field called:
hibernate.hbm2ddl.auto
It contains values such as create-drop, create, etc... Change that to your liking. Take a peek at the EJB3 TrailBlazer and the sections about deployment. I believe they speak to this a bit more. Specifically:
